Rainbow trout Oncorhynchus mykiss is a temperate fish species that has adapted to the rivers of mountainous regions around the world and meets most of the needs of fish consumers. It is one of the cultivated species of the Salmonidae family because it has excellent characteristics for aquaculture and sport fishing.
Rainbow salmon contains 70.2% of moisture, 16.9% of pezotein, 10.1% of lipid and 2.4% of ash, while these amounts for fillets were 73.8, 19.5, 1.5 and 4.9%, respectively.
